Always thought meal prep was a waste of time until I actually tried it

For years I figured spending Sunday cooking would just lead to sad leftovers by Wednesday. Then my friend Jen from work showed me her system for prepping just 3 ingredients (rice, roasted veggies, grilled chicken) and mixing them different ways each day. Saved me about $60 a week on lunch takeout from the cafe on Elm Street. Has anyone else found a prep style that doesn't get boring by day 4?

Yeah, I was totally the same. What saved me was doing a 'base prep' Sunday (rice, chicken, roasted veggies) but then having like 3 different sauces on hand. A jar of teriyaki, some salsa verde, and a bottle of ranch. Just switch the sauce each day and it feels like a totally different meal. Also, don't be afraid to toss the leftover chicken into a wrap with some lettuce and cheese on day 4. That's my go-to when I'm sick of looking at the same bowl.
