Finally gave in and started meal prepping on Sundays after years of hating the idea
I used to think meal prepping was for people who had no soul or spontaneity. Every Sunday I'd see those perfectly stacked containers on Instagram and roll my eyes. But then last month I hit a wall where I was spending like $60 a week on takeout lunches because I couldn't get my act together in the morning. My coworker in accounting told me she saves about $200 a month by prepping on Sundays and that number got me. So I tried it with just three lunches for Monday through Wednesday. Turns out it's not that hard once you get a rhythm going. The key was I stopped trying to make fancy meals and just do rice, chicken, and roasted broccoli. Has anyone else found a specific meal that's easy to batch without getting bored?

My friend Sarah tried meal prepping but she got so bored with plain chicken and rice after week two. She started adding different sauces each day, like a teriyaki one Monday and a buffalo sauce Wednesday. Two weeks of plain chicken and rice before adding sauce sounds like a cry for help. I once meal prepped for three days straight with just boiled chicken and broccoli, no salt, and by day two I was dipping it in ketchup like a sad person at a diner. I finally cracked and ordered a pizza on day three, then ate the rest of the chicken cold out of the fridge while standing in my kitchen. So yeah, respect the sauce, but also respect the fact that some of us are just one bad meal prep away from a breakdown.
