Hot take: I thought air fryer salmon was a terrible idea until I saw it at a friend's house in Boise
I was visiting my friend in Idaho last month and she made dinner. She pulled out a couple of salmon filets, patted them dry, and just threw them in the air fryer with a little salt and pepper. I was sure it would be a dry, fishy mess. But after about 12 minutes at 380 degrees, it came out perfect. The skin was crispy, the inside was still moist, and it didn't make her whole apartment smell. She served it with some rice and a lemon wedge. I've made it three times since I got home, and my family loves it. It's so much easier and less messy than using a pan. Has anyone else tried a simple air fryer salmon recipe that turned out way better than you expected?

Yeah, Boise's full of hidden food tricks like that.

Nah, that's a total fluke. My air fryer salmon always comes out dry and the skin gets weirdly rubbery.

Wait, Boise? That's the part that got me. Never pictured Idaho as a salmon air fryer hotspot.
