Showerthought: I saw a food truck in Austin using an air fryer for their tacos
I was at a food truck park on South Congress last weekend and the line for the birria tacos was huge. I peeked at their setup and they were crisping the cheese on the tortillas in a big commercial air fryer instead of a flat top. The cook said it gives a more even melt and frees up space. Has anyone else tried using their air fryer for taco shells or quesadillas at home?

Honestly that's genius for getting the cheese crispy without burning it.

Yeah, it's one of those small kitchen wins. You see it everywhere once you look, like propping up toast to keep it from getting soggy. People are really good at finding clever fixes for tiny problems.

My buddy Mark tried this last month after his stove broke. He ended up making these weirdly perfect cheese crisps for nachos in his little air fryer. He said the cheese melted all the way through without any burnt spots, which his old oven always did. Now he uses it for heating up tortillas and even those frozen taquitos. It's basically his backup cooktop now.
