Stop overcrowding the basket, even small batches need room
I kept wondering why my frozen fries came out soggy on one side and burnt on the other. After about 3 weeks of that, I finally watched the basket while it ran. Turns out I was piling stuff in like a deep fryer, but air fryers need space for the hot air to move around. I now put a single layer, maybe 6 to 8 nuggets max in my 5 quart model, and shake them halfway. The difference is night and day, crisp on all sides instead of patchy. I also learned that stacking smaller items like green beans just steams them, which defeats the whole point. Has anyone else had better luck after you stopped filling it to the brim?
Learning this the hard way is such a rite of passage lol. My first month with an air fryer I was basically making steamed fries and wondering why they sucked. Now I do one layer, shake at the halfway mark, and if I'm doing a big batch I just cook it in two rounds instead of cramming it all in. Yeah it takes longer but soggy fries are a waste of potatoes and time. For stuff like nuggets or wings, leave a little gap between each piece too, they crisp up way better when they aren't touching. Green beans and broccoli are the worst for this, they just sweat and go limp if you pile them up.
