That neighbor who showed me how to crisp chicken wings changed my routine

Old Mr. Garcia from two doors down came over last summer when he saw me struggling with soggy wings. He just said "400 for 12 minutes, flip, then another 8" and walked away like it was nothing. Has anyone else had a random tip from a stranger that totally stuck?

Oh man, old Mr. Garcia sounds like a legend. That's such a solid tip too, I've been doing mine at 425 but I might have to try his method next time. It's kind of amazing how the simplest advice from a stranger can just click in your brain and change everything. I had a lady at the grocery store once tell me to pat my chicken dry with paper towels before seasoning, and it was like a lightbulb went off. That one little thing made such a huge difference in how the skin turned out, I still think about it every time I cook.

Saw a YouTube video a while back about patting chicken dry too. Some chef guy explained it scientifically. Makes a huge difference for real. That paper towel trick and Mr. Garcia's method sound like a perfect combo actually. @kim.xena you should try both together and see what happens. Game changer for sure.

My buddy tried that exact trick and said his wings came out perfect for the first time ever.
