Took me 3 months to figure out why my chicken was always dry

Kept making air fryer chicken breasts that came out like cardboard no matter what temp I used. Finally realized last week I was overcooking by 5 minutes because my cheap thermometer is off by 15 degrees. Anyone else have a kitchen tool that's secretly messing up their recipes?

Yeah @the_margaret nailed it, simple fix but such a game changer.

Did you check the calibration of your thermometer? My friend Bonnie went through the same thing with cookies for MONTHS. She kept burning the bottoms but the tops were pale. Turned out her oven thermometer was reading 50 degrees too low. She was livid when she figured it out because she'd wasted like 10 pounds of butter and chocolate chips. Now she keeps a backup thermometer in the drawer just to double check every few weeks.

Used to think thermometer calibration was just a food snob thing. Honestly thought my friend was being dramatic about her cookies until I tried making macarons and they came out a disaster. Checked my oven thermometer and it was off by 40 degrees. Now I test it with boiling water every time I bake something important. Simple fix but man does it make a difference.
