Update: My frozen french fries went from pale and soggy to golden and crisp after I started soaking them in cold water for 30 minutes before air frying.
I saw a specific before-and-after difference in my frozen french fries, where they were always a bit limp and sad, but after I started the soaking step (which pulls out excess starch, I guess) for a solid half-hour and then patted them super dry, they came out of the air fryer looking and tasting like a proper diner's version.

You said "game changer" and I'm really curious. What exactly are you soaking? I've tried soaking beans and rice, but the results were just okay. What's your full method? Like, cold water or warm, and for how long? I feel like the details make all the difference here.
