The farmers market demo that made me quit following recipe channels

I was in Santa Fe last month watching a guy sell $12 jars of spice blend. He had this whole routine, music playing, big crowd. I bought one. Got home, tried it, it was just paprika and garlic powder with a fancy label. That's when I realized half these cooking channels are just selling a story, not technique. I started testing recipes back to back with cheap store brands. Guess what. Most of the expensive stuff isn't better. Anyone else dump the premium ingredients after a reality check like this?

...and honestly that tracks with what I read in some food science newsletter last year. They tested 20 different "artisanal" spice blends and like 14 of them were basically identical on paper, just with different ratios of the same cheap base spices. The whole trick is the packaging and the story, not the actual flavor. I also saw a video where a chef broke down how most $15 spice rubs are just smoked paprika, something sweet, and a bunch of salt. Once you know that, you can make your own in five minutes for like two bucks. It's wild how much money people throw at a nice label and a guy with a good pitch.

Wait, so you're telling me the $12 magic dust was just fancy paprika and garlic powder? At this point I'm half convinced the whole farmers market scene is just a live action role play for people who want to feel like they're buying food from a wizard. I've got a feeling my next trip to the spice aisle is gonna be a lot less interesting but a whole lot cheaper.
