TIL I've been ruining Thanksgiving gravy for 10 years by doing one dumb thing

Last year at my sister's house, I watched her make gravy from scratch. She simmered the turkey neck and giblets for like 2 hours while the bird rested. I always just dumped flour into the pan drippings and called it done. My gravy was always lumpy and tasted like paste. She pointed out I was skipping the stock step entirely. Has anyone else discovered they've been doing a basic cooking thing totally wrong for way too long?

And this is why my friend Jen spent a whole year convinced she just wasn't a gravy person, turns out she was just using water instead of stock. She finally watched a video and had this huge 'oh duh' moment at 3am, then texted me a photo of her perfect gravy the next Thanksgiving like she'd won an award. I still give her crap about it, but at least now her mashed potatoes don't look like they're floating in dishwater.
