Can we talk about how I used to crush garlic with the flat side of the knife blade?

For like 5 years I thought smashing garlic cloves with a chef's knife was fine, until a friend who worked at a Greek restaurant in Baltimore showed me a garlic press in 30 seconds flat. The knife method leaves chunks and you lose half the juice. I bought a $8 garlic press off Amazon and now my pasta sauce actually tastes like garlic instead of just bitterness.

Whoa wait, Baltimore? Like the city with the crab cakes and the harbor? I've never even met anyone from Baltimore before, that's wild. So your friend was just casually showing you a garlic press like it was no big deal while you were probably standing there with a chef's knife in your hand feeling like a total idiot. I bet that restaurant kitchen had like five of them sitting around and nobody ever mentioned it to you until that moment. That's the kind of secret knowledge you think you have to pay for but it's just sitting on Amazon for eight bucks.
