Used to roll my eyes at people who meal prepped on Sundays until I tried it for 8 weeks straight

I always thought meal prep was for like fitness influencers or people with no social life. But my grocery bill was hitting $600 a month for just me and my roommate and we were throwing out so much food. So I gave it a shot back in January. Just basic stuff - chopping veggies, cooking rice and chicken, portioning into containers. After 8 weeks my grocery bill dropped to around $350 and I actually ate more veggies than I ever did before. Has anyone else had a similar thing where a trend you hated actually worked out for you?

honestly yeah I noticed a pretty big difference. I started adding spinach to my smoothies and snacking on bell peppers instead of chips. after about a week my digestion was way more regular and I wasn't crashing in the afternoon like I used to. also felt like my skin cleared up a bit, less breakouts around my chin. it wasn't like a huge dramatic change overnight but it was noticeable enough that I stuck with it. definitely worth trying if you're on the fence about it.
