Used to think adding more butter to everything made it taste better, boy was I wrong

I went through a phase about 2 years ago where I was just dumping extra butter into every single dish I made. Thought it was the secret to restaurant quality food lol. Then I tried to make a bechamel sauce for some mac and cheese and it came out greasy and separated on me. My buddy who actually went to culinary school pointed out that I was throwing off the fat ratios in the recipe. Now I actually measure my butter and follow the recipe exactly, and honestly things taste way cleaner and you can actually taste the other ingredients. Anyone else have a cooking hack they thought was genius that actually made things worse?

Nah you're right, too much butter just makes everything greasy and kills the other flavors. I learned that the hard way too, now I measure everything and save the extra butter for finishing dishes at the end instead of cooking with it.

I actually think more butter is almost always the answer, you just gotta balance it with the right technique.
