Am I the only one who thinks sourdough starter discard recipes are OVERRATED?

Last week I tried making those famous discard crackers from a popular blog, and they came out like salty cardboard. Everyone on here RAVES about using every bit of discard, but honestly I think it's just food waste with extra steps. My grandma NEVER used discard, she just tossed it and her bread was PERFECT every time. Has anyone else had bad luck with those trendy discard recipes or is it just me?

The discard pancakes actually turned out fluffy for me after I added a splash of buttermilk.

Man, I hear you loud and clear! Those discard crackers are a total letdown, I tried them twice and both times I ended up with something that could double as a hockey puck. But here's what I'm wondering - did you actually taste that famous discard pancake recipe before writing them all off? I ask because I've had way better luck with those than with the crackers, they actually turn out fluffy and tangy. Your grandma dumping the discard makes total sense to me, but have you ever thought maybe the issue is the recipes themselves, not the idea of using leftover starter? Some of those food bloggers just throw stuff together without testing it properly.
