Debate: my aunt swore you have to chill cookie dough for 2 hours minimum, but I tested it against a batch baked right away
The chilled ones spread less and had a chewier texture, but the room temp ones were softer and easier to scoop. Which camp are you in on this one, has anyone else run a side-by-side test?

Used to be team "bake it now let's go" all the way because I'm impatient. But my sister made me try her chilled dough cookies at Christmas and I had to admit they were way better looking and had that perfect chew. Now I always chill at least an hour because the texture difference is just too good to skip.

Blame my sister for making me admit I was wrong too, except I was so stubborn I burned a whole batch before I finally tried it her way. Now I feel like a traitor to my old impatient self every time I pop that dough in the fridge. But man, those chilled cookies come out looking like they belong in a bakery instead of my sad little kitchen. Guess I traded speed for being able to actually show my face at family gatherings without shame.
