Debate: should you chill cookie dough overnight or bake right away?
After messing up 3 batches at my sister's Christmas party last year, I'm team overnight chill all the way. But my buddy swears fresh dough gives better spread and texture. Which side are you on and what convinced you?

Three batches? Sounds like more of a technique problem than a chilling debate.

Right, but if it's technique, what exactly are they doing wrong with the batch process? @logan705 I've seen people skip the rest phase between chills and then wonder why the clarity tanks. Is it a temp control issue, or are they just rushing the whole thing?
