Hit 50 perfect macaron batches yesterday. Took 3 years of fails.

3 years of lopsided feet and cracked shells. Finally cracked the code with an oven thermometer. How many tries did it take you?

Oh man, 50 perfect batches is insane! That's serious dedication. But here's what I gotta ask - did you change your almond flour brand too? I swear different brands need totally different mixing times.

I know exactly what you mean about the almond flour. I switched to Kirkland brand once and my first batch came out like glue. It's funny how something so small can mess up the whole rhythm of a recipe. That's how it goes with a lot of stuff though, not just baking. Even just changing my coffee creamer brand threw off my morning routine for a week.
