I finally picked parchment over silicone mats for cookies

I kept going back and forth between parchment paper and silicone baking mats for my chocolate chip cookies. After 4 batches last Sunday, I landed on parchment because the bottoms got way more golden and crispy. The silicone mats made the cookies spread too much and they came out pale on the bottom... not what I wanted. With parchment, I got that perfect chewy center with a little crunch on the edge. Has anyone else noticed a big difference between the two for something like shortbread or sugar cookies?

idk man maybe it's just me but parchment is way better for crispy bottoms.

Totally agree with you. Tried silicone mats twice for sugar cookies and they came out floppy with pale bottoms, not the snap I was going for. Parchment paper is the only way I roll now for anything I want a little crisp on.

@the_cole has the right idea with sugar cookies, but what about shortbread where you want that melt-in-your-mouth texture? Does parchment still give you a clean release on those delicate cookies without tearing them apart? Trying to figure out if it's worth switching for something that tender.
