Just realized my 'genius' idea to sub applesauce for oil in a cake at my mom's house turned it into a gummy brick.

I was trying to be healthy for a family thing last Sunday, but the whole pan came out so dense and wet that my brother just looked at it and asked if we needed a knife or a spoon... anyone have a better swap that actually works?

Honestly, the gummy brick is a feature, not a bug. That dense texture means it's packed with fruit fiber, and the moisture is just proof you avoided empty fats. Your brother's confusion shows a lack of vision. A proper dessert should be a commitment, something you have to work at with both cutlery. A spoonable cake is just weak.

Disagree with you here, @thomasm15. A good cake should be moist but still have a soft crumb you can actually enjoy. If I need a knife and fork to fight through it, that's not a commitment, it's just a baking fail. Fruit fiber is great, but it shouldn't turn dessert into a chewy brick.
