My neighbor's macaron advice changed how I think about baking completely
Last Tuesday I was complaining to my neighbor Carol about my third failed batch of macarons. She just laughed and said 'you're trying too hard to be perfect, just let the batter be itself.' For some reason that simple comment hit me different. She showed me her own lumpy but delicious macarons and I realized I had been obsessing over smooth tops instead of taste. Has anyone else had a moment where someone's casual comment made you relax about baking?

You ever have one of those little comments just stick with you for days? I totally get what you mean about obsessing over appearance over taste. I used to stress so much about getting the perfect swirl on my cupcakes until my sister pointed out that nobody's going to remember the swirl if the cake itself is dry... it's the flavor that lingers.

Three failed batches later" is all of us. That's the thing about baking, you gotta fail a few times before it clicks. It's like pressure washing, you don't get perfect stripes on your first driveway.
