Okay, I was wrong about letting cookie dough rest overnight

I read a Serious Eats article that said resting dough for 24 hours doesn't actually make a huge difference for most drop cookies, which blew my mind (I've been doing it for ages). Anyone have a recipe where it actually made a night-and-day difference?

My grandma's ginger snap recipe. The dough is super wet right after mixing. Let it sit in the fridge for a day, and it firms up perfectly. You get a thicker cookie that still cracks on top. Fresh dough just spreads into a flat, greasy mess every time. That rest is non-negotiable.

My chocolate chip dough is the same, needs that overnight chill.

Left a batch of oatmeal chocolate chip dough in the fridge for three days once. Forgot about it. Baked them anyway and they were weirdly perfect, almost caramelized on the edges. Now I just leave everything in there until I remember.
