Warning: my 3 tier birthday cake slid apart in the car on I-95 and I wanna cry
I spent 6 hours Saturday building a lemon cake with buttercream for my niece's 7th birthday, and the whole thing was stacked nice and cold in the back seat. Hit a bump just past the Wilmington exit and the top tier slid clean off into the floor mat, frosting side down. Do you guys chill the cake longer before driving, or should I just start delivering them in pieces and stacking at the party?
A lemon cake with buttercream sitting in a warm car for the drive to Wilmington is already living on borrowed time, bump or no bump. Cakes slide because the frosting gets soft and the layers aren't anchored, not because you didn't chill it for 12 hours. A dowel or two through the middle and a non slip mat would've saved the whole thing. Six hours of work hurts, sure, but this is a stacking problem, not a cake problem. Deliver it in pieces next time if you want, but that's just giving up on the fix.
