Warning: My 'tough' bread dough was a total lie for months

I just found out my kitchen scale was set to ounces, not grams, so I've been using WAY too much flour. The tip-off was my neighbor asking why my loaves looked like bricks. Anyone else ever have a simple tool setting ruin a whole process?

My old oven ran 50 degrees hot for a whole year.

Wow, that's wild. I read somewhere that's actually super common with older ovens, the thermostat just wears out. Bet you made some extra crispy meals.

Yeah, I kinda disagree on that one. My old oven was a beat up piece of junk from the 80s and it held its temp just fine for like 15 years. Sometimes it's just bad luck or maybe someone messed with the knob.

Heard something similar, a buddy's oven was off by like 30 degrees for years.
