Watched my neighbor's kid burn toast and learned why my own bread always comes out dry

Standing in my kitchen in Portland last Tuesday, I saw my neighbor's kid pop a slice of sourdough for exactly 2 minutes. That's what I do. But his came out golden and mine is always a crumbly mess. Turns out, I've been leaving my bread in the fridge for 3 days before toasting it. Humidity difference wrecks the moisture. Anyone else notice how prepping bread storage changes toast results?

Yeah keep bread in a paper bag on the counter, not the fridge.

I've done the exact same thing with bread left in the fridge too long, dry as dust every time. Your neighbor's kid finding that sweet spot for humidity really makes you rethink storage. Solidarity on the toast struggle, it's a small thing that drives you crazy until you figure it out.

Actually my bread lasts way longer in the fridge, like a whole extra week sometimes, and toasting it straight from cold gives it that perfect crunch without getting burnt. I call shenanigans on humidity being the magic trick, dry fridge air keeps mold away and that's way more important imo.
