Appreciation post: the judge at my first KCBS contest in Tulsa who ripped my brisket apart
I did my first KCBS sanctioned contest back in April in Tulsa and thought I had it locked in. I turned in my brisket and the judge walked over to my table after and asked if I had rushed the rest. I had no clue what he meant, so he told me to slice a piece and look at the juice on the board. He pointed out that 45 minutes of resting was not enough for a 14 lb packer and that my flat was still tight in the middle. I started resting mine for 2 hours in a cooler with towels after that. Next contest I placed 4th in brisket which was a huge jump for me. What rest times are you guys running on packers that size?
My first packer rest was so short the cow was probably still mad at me. These days I go 2 to 4 hours wrapped in towels in the cooler and the flat comes out way more tender.
