Bought a $9 bag of peach wood chunks for my offset and my ribs finally got that color I wanted
I've been smoking on the same Oklahoma Joe offset for two years with big box store splits, and the bark always came out dark and bitter. Last weekend I grabbed a $9 bag of peach chunks at a farm stand outside Fredericksburg and used them for a 5 hour rib cook at 250. The color came out that deep mahogany I see in comp pics, and the smell was sweet, not acrid. I know it sounds small, but chasing that color on a cheap stick burner felt hopeless. One bag did two cooks and I'm already planning to buy a case. Anyone else switch wood and get a result they didn't expect?
