Can we talk about how pitmasters used to cook without thermometers?

I remember my uncle just poking the meat with a stick to check. Now we have probes and apps, but his bbq was never dry.

How did they get it so right without gadgets? It was all about time and feel, not numbers. They learned the fire's mood and the meat's give. Now we stare at probes and miss the whole vibe. That hands on skill just can't be downloaded.

My grandpa in Ohio baked pies by listening to the oven hum. He said the crackle meant perfect crust, no thermometer needed.
