Wait what. I gotta know what that blend is now because I thought I had his method pretty much figured out. Post oak is the obvious one everyone talks about but if it's something else entirely that changes everything. This is the kind of barbecue info that can completely mess up your whole smoking approach if you've been doing it wrong for years. Drop the details already don't leave us hanging like this.

Post oak is the obvious one" - that's what I thought too. But man, wait until you hear this. I got it from one of his pit crew guys at a competition last year. He uses a three-way blend. Post oak for the backbone, sure. But he mixes in pecan for sweetness and a little bit of persimmon for that earthy kick. Total game changer. I tried it once on a brisket and almost fell over.
