Overheard a guy at the hardware store say 'real barbecue doesn't need sauce' and it took me back to my granddad's old stick burner in Austin.

He'd just use salt and pepper, tending those post oak logs for 12 hours straight, and that memory makes me wonder if we've lost something by always reaching for the binder and the wrap too soon these days.

Maybe it's just me but barbecue gatekeeping feels a bit silly. Good food is good food, sauce or no sauce. Getting too deep about it takes the fun out of a meal.

Totally agree, it's just meat and fire at the end of the day. Some folks act like putting sauce on ribs is a crime, but if it tastes good, who cares? The whole point is to enjoy it with friends, not win a purity contest.
