Pro tip: Stop flipping your brisket every hour
Watched a buddy ruin a $80 prime packer last Saturday. Kept opening the smoker to check and flip it. Lost all the heat and the bark never set right. I told him to leave it alone but he didn't listen. Anyone else see folks over-handling their meat and messing up the cook?

Honestly, the best thing you can do for a brisket is shut the lid and walk away. Every time you peek you're just stealing heat and moisture for no reason.

Respectfully, @the_wren, I gotta push back a little here. In my experience, a quick peek after a few hours to check your bark and add a spritz can actually help build that nice crust. Your mileage may vary of course, but I've found that total neglect sometimes leaves the outside a bit dry for my taste.
