Spent 6 hours trying to dial in my offset smoker and still couldn't get past 225
I totally thought I had it figured out after watching a bunch of YouTube videos. But last Saturday I was out there from 8am to 2pm messing with intake and exhaust dampers on my OK Joe Highland and the temp just kept bouncing between 200 and 250. Ended up just throwing a pork butt on anyway and it turned out fine but man that was frustrating. Has anyone else had to just accept that some smokers have a mind of their own?

My OK Joe Highland was the SAME way for months until I tried the minion method with a smaller fire. @sammoore is right on track with that suggestion, it made a HUGE difference for me. I started using a 2-foot chimney starter instead of a full one, and that helped keep the temp steady around 250 without the big spikes. Also swapped out the stock charcoal grate for a cheap expanded metal one from the hardware store, way better airflow underneath. After that I could actually walk away for 30 minutes without stress.
