Spent a whole Saturday trying to dial in my brisket temps on an old offset smoker
Turned out the thermometer on the lid was off by 50 degrees, and it took me six hours and three ruined briskets to finally check it with a probe, has anyone else fought a bad thermometer that long?

Oh man, is it really that big of a deal? I mean, I get being frustrated but six hours and three whole briskets? That feels like overkill. Idk, maybe it's just me but I usually catch stuff like that way sooner just by feeling if the smoker feels way hotter or colder than the gauge says. You probably could have just eyeballed the wood burn rate and saved yourself a lot of meat.
