Swapped my old gas offset for a charcoal drum rig 6 months ago...

Used to just set the temp and walk away but now I'm babysitting vents every 15 minutes. Has anyone else made the switch and found the flavor difference worth the extra work?

@gibson.elizabeth nailed it, the flavor is real but man does it take some patience. I've had plenty of nights where I'm out there with a flashlight tweaking the vents every 10 minutes.
