Switched to whole packer brisket after a butcher set me straight
I used to only buy flats at my local Kroger in Austin because I thought points were too fatty. This old butcher named Carl finally grabbed me by the arm and said "son, you're leaving all the flavor on the counter." He walked me through how to trim a whole packer and showed me where the deckle hides. First cook came out way more tender than my flats ever did, and I haven't bought a flat since. Anybody else get converted by a random meat counter employee?
