Talked to a retired pitmaster in Lockhart about brisket stalls
Ran into this old timer at Kreuz Market last Saturday who said he never wraps his brisket, even though the stall can push his cook to 14 hours. He told me, "you don't fight the meat, you wait it out," and that honestly hit different than all the foil boat videos I've watched. Has anyone else ditched wrapping entirely and just let the bark ride?
