Tired of steamed meat? I cook my brisket without foil now.

Everyone says to wrap brisket to keep it moist, but imo it ruins the bark. Mine was always too soft on the outside. So I tried leaving it unwrapped and just mopped it every hour. The bark got crazy crispy and the meat stayed juicy. Took some practice to keep the temp right, but now I'm hooked.

Using foil while cooking is common to prevent drying, not only for leftovers.
