Warning: I used to think a pellet smoker was the easy way out compared to my old offset in Austin.

After 3 tries on the same brisket, the offset's steady heat just gave me better bark and smoke flavor. Anyone else find that simpler gear sometimes wins?

Why treat it like it's not a big deal? A messed up brisket is a real waste of time and money. Keeping the heat steady is the most important part, not some small detail. If you don't get that right, you ruin good meat. It's worth stressing over because the results are either great or terrible. Treating it like no big deal is how you end up with another rock on your plate.
