DAE finally figure out they were greasing freehub pawls instead of the ratchet ring this entire time?

On Shimano freehubs the pawls and the ratchet ring are the same grease point, so you were probably fine. The ring itself just needs a light coat so the pawls can catch, not a packed layer.
