Talked to a 30-year vet about preheat temps last week
He said he never bothers with the charts, just touches the plate and guesses. Made me wonder how many of us are overthinking something that basic.

My 72 year old neighbor told me the same thing a few years back and I brushed it off as old school thinking. But @michaelchen, after reading your post and remembering what he said, I tried it on a few small jobs and honestly it works better than I expected. The plate tells you a lot through your fingers if you pay attention to the heat coming off it. I still use my thermometer for the big batch work but for quick prep jobs this method saves a lot of time and cleanup.

Yeah I thought the same thing about just touching the plate and guessing. Sometimes I wonder if we all overthink preheating when it really comes down to feel and experience.
