Why does nobody talk about sewing signatures over a support instead of through the whole spine?

I bound two copies of the same 300-page text block last week in my garage in Akron, one with a kettle stitch straight through the spine and one with linen tapes, and the tape-sewn book opened flat on the very first try while the other cracked at the hinge by page 40, so which support are you all using for heavy paper?
