Honestly, same. My first batch was just onion skins and celery ends and it tasted like sad dirt water. Took me forever to learn you need some carrot tops or a bit of mushroom to round it out. I definitely froze a bag of scraps for three months once because I was scared to try again.

Yeah the "sad dirt water" phase is so real lol. I had a batch that was just potato peels and it was like drinking cloudy starch. The real game changer for me was saving the liquid from canned beans, that stuff adds a crazy amount of body. I almost gave up too but now my freezer looks like a scrap graveyard.
