Can we talk about my $4 bag of lentils that turned into 8 meals last week

Threw a pound of brown lentils in the slow cooker with some carrots and onions I had lying around, and it fed me for almost the whole week. Has anyone else found a specific cheap ingredient that just keeps giving?

Wait, does that mean you ate lentils 8 days in a row without getting sick of them? I'm impressed because I tried that once with a big batch of black beans and by day 4 I was staring at my bowl like it had personally wronged me. Though honestly that's more of a me problem than a bean problem, I have zero food discipline and will eat the exact same thing for three days then refuse to touch it for six months. But you're right, dry lentils and beans are absolute champs for stretching a grocery budget, even if my willpower can't keep up with them.

Dude yes! Canned chickpeas are my go-to - drain em, roast em with some oil and salt, and they're good on salads, in curries, or just as a snack for days.

Fifteen minutes in an air fryer at 375 and @wrenh65 can get those chickpeas even crispier without turning the oven on.
