Finally found a way to stretch one batch of chili into 4 different meals without getting bored

I made a big pot for $12 last Sunday and turned it into chili mac, loaded baked potatoes, nachos, and a breakfast hash with eggs, anyone else got go-to tricks for making leftovers feel like new dishes?

Is it just me or does every problem in life come down to the same trick - change the base and the toppings so your brain thinks it's something new? That spaghetti squash idea is genius though, I'm stealing that for next time.

Wait, are you counting the breakfast hash as a completely different meal or just a variation of chili over eggs? Personally I'd say chili mac and loaded baked potatoes feel pretty close to the same thing just swapped out the starch. What really stretches a batch for me is using it as a sauce over spaghetti squash or turning the last cup into stuffing for bell peppers with rice and cheese. Also try freezing half before adding any pasta or potatoes, that way the texture stays right when you thaw it. The key is changing up the base and the toppings each time so your brain doesn't register it as the same dish.
