Frozen veggies are actually better than fresh for budget meals

I used to turn my nose up at frozen vegetables because I thought fresh was always better. But after three months of trying to meal prep on $40 a week in Austin, I gave in and bought a big bag of frozen mixed veggies for $1.50. Turns out they keep way longer and I stopped throwing away slimy produce every Friday. What finally sold me was roasting a sheet pan of frozen broccoli at 400°F and it came out crispy, not soggy. Has anyone else switched to frozen for certain meals and found it works better?

The frozen broccoli works great but I still buy fresh lettuce.

Well, call me crazy but I guess frozen lettuce just doesn't hit the same. You can freeze everything else in the produce aisle, but god forbid you try it with a salad. Some lines just aren't meant to be crossed, I guess.

You said "frozen broccoli works great" and I feel like that's exactly the stuff people need to hear more often. A lot of folks sleep on frozen broccoli but it's a lifesaver. Fresh lettuce I get, you can't freeze that slimy mess. But honestly, why is everyone so scared of frozen veggies? They're cheap, they don't go bad in three days, and they're just as good for soups and stir fries. You're doing it right by mixing frozen and fresh.
