Trying to make dried beans from scratch took way longer than I thought

I always figured soaking dried beans overnight then boiling them for an hour would be quick and easy. But my first try with a pound of black beans took over 3 hours to get soft plus I forgot to add salt until the very end. Some folks say canned beans are just fine and save you time, others swear dried beans taste better and cost way less per pound. Which side are you on for a budget meal - do you bother with dried beans or just grab the cans for $1.50 at the store?

Used to swear by canned beans for convenience, but after actually trying dried ones for a budget lentil soup I totally switched. It took 45 minutes for red lentils, way faster than I expected, and the flavor was just deeper and richer. Plus a single bag of dried beans got me through three big meals for what one can costs. Now I keep a stash of dried black beans and chickpeas, just soak them while I'm at work and they're ready to cook when I get home.

That 45 minute red lentil trick totally changed my mind too, I used to think dried beans were a whole day project. Do you do anything special with the soaking water or just toss it?

totally changed my mind" is a little dramatic for just cooking lentils, dontcha think? @valh32 going full dried bean evangelist over here lol. I'll stick with cans for the extra 50 cents, my time's worth more than that.
