Got a 50 dollar meat grinder off Craigslist and it paid for itself in 2 months

I found a used grinder for 50 bucks last spring. I started buying whole pork loins when they go on sale for 1.99 a pound instead of paying 4 bucks for ground pork. After grinding up about 25 pounds of meat in one weekend, I saved enough to cover the cost of the grinder. Has anyone else tried buying bulk meat and processing it themselves?

Whole pork loin is actually a different cut than what you'd use for ground pork, usually that's shoulder or butt. The loin is leaner and makes a drier burger or sausage without enough fat. You might want to mix in some pork fatback or shoulder trimmings to get a better texture.

Oh great, so I basically made fancy expensive dry burgers instead of saving money.

Oh man, did you try mine? I did the exact same thing with a whole boneless pork loin I got on sale. Thought I was being so smart grinding it myself for burgers. Total disaster. They were so dry and crumbly they fell apart on the grill, and I swear I could hear them squeaking when I bit into them. Your mileage may vary, but I learned the hard way that you need a good 20-30% fat content for a decent burger, and loin just doesn't have it. I ended up mixing in some bacon I had leftover, and that helped a little, but honestly it was still not great.
