Best Saturday in ages, sold out the whole beef case by 2pm

Last Saturday had a rush I wasn't ready for. Started with a wedding order for 40 ribeyes, then a restaurant called for 30 pounds of chuck, and before noon a family bought every brisket I had out. By 2pm the beef case was bare, so I pulled the pork shoulders and started breaking down a fresh side for the cooler. I figured the quiet Sunday would give me time to restock, but I ended up running a second grind for burger mix that afternoon. Anyone else get those weird days where everything moves at once, or is it normally a slow drip for you too?

Always thought it was steady until brisket lady wiped me out too. Same wave hit us.
