Had a customer ask me to cut a steak into the shape of Texas last week

This guy came into the shop in Austin and was dead serious about it for a birthday gift. I spent like 20 minutes with a template and a boning knife trying to get the panhandle right... It came out looking more like a weird boot. Anyone ever get a request that made you just stop and laugh?

Honestly, you need a stencil cut from a plastic lid. Cardboard soaks through. Trace it quick with a toothpick, then follow the line with the knife. Saves you half the time and keeps the edges cleaner. That panhandle is a nightmare freehand.

I used to think those weird food requests were just for internet videos until I worked a summer at a BBQ joint in Houston. We had a regular who wanted his brisket sliced into the letters of his kid's name every Friday. It totally changed my mind about how far people will go for a personal touch, even if the Texas steak ends up looking like a boot. That's a solid twenty minutes of care right there.
