I finally bought a $1200 vacuum tumbler for my sausage batches

It cut my mixing and curing time in half, but now I'm wondering if a cheaper model would have done the same job. Anyone have strong feelings on specific brands or features I should have looked for?

Consider noise levels, like patjones said.

The real question is how much you trust the motor on a cheap unit to run for hours with a heavy, wet load. A weak one burns out fast, and then you're buying twice. Your time saved is worth real money too, so that high price might actually pay for itself faster than you think.
