Just realized my aging process might be off for brisket
Heads up, I've seen some guys getting weird results with dry aging at home. Can anyone share their setup to avoid spoilage?

My buddy tried that once and his fridge smelled like a science project gone wrong for weeks. He ended up just buying a proper aging bag instead of rigging something up.

Yeah, that story doesn't surprise me at all (like, why do we always think we're the exception to the rule?). Rigging up a DIY aging setup sounds about as smart as using a hair dryer to defrost your freezer. Your poor buddy basically turned his kitchen into a biohazard zone for the sake of saving a few bucks. I mean, come on, if your fridge starts smelling like a high school lab experiment, you've already lost the battle. It's the food version of those "life hack" videos that always end in disaster. Some shortcuts just aren't worth taking (unless you enjoy smelling like old cheese for a month).

My neighbor's been a mechanic for 30 years and says most engine problems start with people skipping basic oil changes. It's the same with dry aging, trying to skip the right setup for a shortcut just ruins good meat.
